    Cutting stainless panel ??

In the morning I need to cut a rectangle in a stainless counter top that is in a kitchen trailer. I was planing on using the plasma cutter then cleaning up the edges, but concerned about protecting the area below the cut. I am looking for alternatives for this type of cut.

    Thanks

Perhaps a water-soaked Welding Blanket folded up into 1/2 or 1/4's placed underneath, covering the area to be protected. I cut over an old wood table top, and when I keep the metal 3 or 4 inches above it, there is barely any scorching on the wood...you are moving so fast! If its a smaller opening, and you can fit it under here, a pan of water would do the trick!
