Years ago a weldor built a horse corral for me. All the posts were 2-7/8" tubing. The gate posts and the sides of the gate were 2-7/8" too. The hinges were made with 3" pipe and the 2-7/8" slide right into it perfect.
The 3" was cut into rings with a chopsaw. Two rings upper and lower were welded to one gate post. Another upper/lower ring was was slid over the gate tube and welded on the top side only. The upper/lower 3" rings rode on each other for bearing surface.
It was a permanent design, so the gate was not removable. Think of the hinge on your door, except without the pin. The corral gate side tube acted as the pin. I'm sure you could modify the design some if you wanted to make it removable.
The pipe would make a sturdy gate....a bit heavy, but sturdy. I always buy my hinges. I like the Blacksmith square hinges. They are heavy duty, weldable, and already have zerks. $$$ isn't bad either. Here is a link:

I've used 2 3/8 to build several gates with, but usually just small walk gates. The 2 7/8 is just the right size to use as a sleeve for the hinge. I would also be worried about the weight, as was before mentioned. I would definitely limit the size of the gate or use a wheel or a guy of some kind. That weight might also have a tendency to pull your fence one way or the other, unless you built some kind of kickers to take the weight when opened.

i have some very heavy doors on the dump truck body i built.
used hot rolled 1/2" round stock for hinge pins. used schedule 80 pipe [chopped] for nuckles
